Mix the mayonnaise with the cayenne pepper (or sweet paprika if you prefer) and 2 tsps of lemon juice an set aside. When ready to serve, divide the lettuce between 6 serving glasses, add a layer of avocado, followed by the prawns. Drizzle over the remaining lemon juice, then add a spoonful of the mayonnaise to each. Sprinkle over the paprika or cayenne and serve with lemon wedges.
