PEAR AND OATS PUDDINGS

200 g oats
80 g butter, melted
3 tbsp chopped almonds
2 tbsp clear honey
1 pinch of ground cinnamon
2 small pears, peeeled and cored and finely chopped
2 tbsp marmalade
25 g flaked almond
1 tbsp marmalade extra
orange zest to decorate
yogurt or custard to serve

- Preheat the oven to 200C/Gas6; butter four individual pudding bowls

- Mix together the oats, butter, nuts, honey and cinnamon in a small bowl; using a spoon, spread two thirds of the oat mixture over the base and around the sides of the pudding bowls

- Mix together the pears and marmalade and spoon into the oat cases; top with the remaining oat mixture to cover the pears; scatter the flaked almonds on top and place some marmalade in the middle

- Bake in the preheated oven for 15-20 minutes, until cooked and tops of the puddings are golden and crisp

- Decorate with orange zest and serve hot with custard or yogurt
