APPLE CHEESECAKE

12 digestive biscuits crushed
85 g butter, melted
500 g cream cheese
100 ml double cream
2 large eggs, plus 2 egg yolks
3 tbsp caster sugar
½ tsp cinnamon
2 apples cubed
3 apples sliced
1 tbsp butter, melted

Preheat the oven to 150C/Gas2; mix the biscuits and butter and press into a 20cm cake tin; bake for 10 minutes, remove from the oven and cool

Put the cream cheese, cream, eggs, sugar and cinnamon into a bowl and beat until smooth; pour a third of the mixture into the tin and add the cubed apple; pour over the remaining mixture and bake for 30-40 minutes until set

Remove from the oven and cool; brush the apple slices with butter and grill for one minute each side; place on top of the cake and serve
