PORK SPARE RIBS WITH ORANGE AND CORIANDER

4 tbsp coriander seeds
3 tbsp ground coriander
4 dried bay leaves
Zest of 3 large oranges
1 tsp sea salt
3 tbsp clear honey
2 tbsp fresh orange juice
3 tbsp olive oil
3 pork spare rib racks about 400g each

Preheat the oven to 180C/Gas4; process in a small processor, the coriander seeds, ground coriander, bay leaves, orange zest, salt and some black to make a coarse powder; stir in the honey, orange juice and oil

Place the ribs in one or two roasting tins large enough to lay them out in a single layer and cover them with the spice mixture; toss the ribs to make sure they are well coated

Cook in the oven for 1 hour, turning once during cooking, until brown and crispy; serve with orange wedges to squeeze over
